Salvadoran enchiladas are a traditional dish that consists of fried corn tortillas topped with red tomato sauce, which can have a spicy kick. On top of the tortillas, shredded chicken, curtido (a salad of pickled cabbage, carrot and onion) and grated cheese are added. They are served with cream and are sometimes complemented with avocado slices.

Ingredients:

6 corn tortillas
1 cup Mucho Gusto Queso Artesano
1 cup cooked ground beef
1 cup pickled cabbage, carrot and onion)
Tomato sauce (optional)
Oil for frying

Preparation instructions

  1. Brown the corn tortillas in hot oil until crisp and toasted.
  2. Arrange the fried tortillas on a plate with absorbent paper to remove excess oil.
  3. On each tortilla, distribute a portion of ground beef, a tablespoon of pickled salad and a pinch of grated Mucho Gusto Queso Artesano.
  4. Optionally, add tomato sauce to taste on top.
  5. Serve immediately.
