Frijoles Borrachos

Frijoles borrachos are a traditional Salvadoran dish full of flavor and perfect to accompany various meals.

Ingredients:

– 2 cups of cooked red silk beans (you can also use pinto, black, or bay beans)
– Mucho Gusto Queso Seco Frijolero
– 150g of bacon, cut into bite-sized pieces
– 1 white onion, finely chopped
– 2 garlic cloves, finely chopped
– 1 fresh jalapeño pepper, chopped (optional, for a little heat)
– 1 can dark beer (preferably stout)
– 1 bay leaf
– Salt to taste
– Freshly ground black pepper to taste
– Chopped fresh coriander, for garnish

Preparation instructions

1. Preparation of the stir-fry:

– While the beans are cooking, heat a large skillet over medium heat. Add the bacon and cook until crispy. Remove excess fat if necessary, leaving about a tablespoon in the pan. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and jalapeño pepper (if using) and cook for 1 more minute.

2. Final cooking:

– In a frying pan, add and mix the sofrito with the beans. Fold in the dark beer as well. Stir well and simmer, uncovered, for about 15 more minutes, or until the beans are cooked through and the liquid has reduced and thickened slightly. Taste and adjust the seasoning with salt and pepper to taste.

Serve

-Serve the beans drunk hot, sprinkle Mucho Gusto Queso Seco Frijolero, garnished with chopped fresh cilantro on top. They can be accompanied with white rice, warm tortillas or as a garnish for meats.
